Every car is assigned a "vehicle symbol rating" based on performance potential, value (for theft insurance) and some vague perception of how it will be used. For instance, the wagon version of a Subaru WRX is one step lower (cheaper) to insure than the sedan; most 2 door versions of a vehicle, equipped exactly the same way as 4 doors, will cost slightly less. That said, your Grand Prix's code will reflect whether it's a high performance model.
While some early Pontiac Grand Prixs had very large engines (up to 455 cubic inches), and the recent Holden-based Austrailian model probably the fastest of all, there is no way that any Grand Prix would be considered a "sports car" by any common usage of the term.

State Farm doesn't classify anything as "sports car". So, it isn't that they aren't giving you a straight forward answer - it is that there is no designation of "sports car" that affects the insurance rates with State Farm.
